It can be eaten as a side or just a quick snack. Either way is cool!

Ingredients: 

  • 1lb Brussels sprouts, rinsed and trimmed
  • 2 tbsp avocado oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • ½ tsp pepper 

For the cheese sauce: 

  • 1½ tbsp nutritional yeast
  • 1 tbsp apple cider vinegar
  • 1 tbsp tahini
  • 1 tbsp hemp seeds
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ cup water

How to prepare:

  1. Preheat the oven to 425°F/220°C. Line a baking sheet with parchment paper.
  2. Steam the Brussels sprouts for 3 minutes and cut them in half. Save fallen leaves. Place them on the lined baking sheet on a tray.
  3. Pour oil, then add vinegar, salt, and pepper over Brussels sprouts. Toss everything by hand. Place the sprouts evenly on the baking sheet.
  4. Bake them for 10 minutes till they become crispy.
  5. While the Brussels sprouts are baking, prepare the sauce. Mix all the ingredients in a blender. Pour the mixture into a saucepan and cook on medium heat for about 5 minutes. 
  6. Serve the Brussels sprouts immediately. You can use the sauce as a dip or a dressing.
