Ingredients:

For the salad:

  • 2 heads of broccoli
  • 1/4 red onion, sliced
  • 3 strips of bacon
  • Sunflower seeds
  • Cheddar cheese, grated

For the dressing:

  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste

Instructions:

  1. Remove the broccoli stems, leaving only the tops for our low-carb broccoli salad.
  2. Add 4 cups of salted water to a pot and bring it to a boil. Have a bowl of cold water ready.
  3. Add the broccoli to the boiling water and cook until tender.
  4. Remove the broccoli and place it in cold water. Once cool, set aside.
  5. Cook the bacon, and once crispy, break it into small pieces.
  6. Add the broccoli, crispy bacon, onions, and cheese to a large bowl.
  7. Mix all your dressing ingredients, pour over the salad, and toss well.
