Ingredients:
For the salad:
- 2 heads of broccoli
- 1/4 red onion, sliced
- 3 strips of bacon
- Sunflower seeds
- Cheddar cheese, grated
For the dressing:
- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar
- Salt, to taste
- Black pepper, to taste
Instructions:
- Remove the broccoli stems, leaving only the tops for our low-carb broccoli salad.
- Add 4 cups of salted water to a pot and bring it to a boil. Have a bowl of cold water ready.
- Add the broccoli to the boiling water and cook until tender.
- Remove the broccoli and place it in cold water. Once cool, set aside.
- Cook the bacon, and once crispy, break it into small pieces.
- Add the broccoli, crispy bacon, onions, and cheese to a large bowl.
- Mix all your dressing ingredients, pour over the salad, and toss well.
