Keto Broccoli Casserole Recipe

As this recipe makes two servings, you can refrigerate half and have the rest another day.

Ingredients for 2 servings:

  • ½lb/225g broccoli, cut into florets
  • 1 tbsp butter, melted
  • 1½oz/45g cream cheese
  • ⅓ cup grated cheddar cheese
  • 2 tbsp sour cream
  • Salt and pepper
  • ½ tsp dried parsley
  • ¼ tsp mustard
  • Pinch of garlic powder, optional
  • 1 tbsp crumbled bacon

Instructions: 

  1. Steam the broccoli till al dente, or microwave for up to 2 minutes in water. 
  2. Mix together the butter, cream cheese, half the cheddar cheese, sour cream, salt, pepper, parsley, mustard, and garlic powder (if using).
  3. Use cooking spray in a small baking dish and put in the broccoli. 
  4. Mix in the cheesy sauce to coat the broccoli.
  5. Top with bacon and the remaining grated cheese. 
  6. Bake in a preheated 350⁰F/180⁰C oven for 15 minutes and remove.
