Ingredients:

  • 1 avocado, diced
  • ½ tbsp avocado oil
  • 1 tsp green onion, chopped
  • ½ tsp garlic, minced
  • 1 tbsp heavy cream
  • 1 cup chicken stock
  • 1 tbsp fresh cilantro, finely chopped
  • 1 tsp ground coriander
  • 1 tsp lime juice
  • Salt, to taste

How to prepare:

  1. Place a saucepan over medium heat. Add oil, green onions, and garlic until fragrant.
  2. Add diced avocado to the saucepan and stir well.
  3. Add lime juice, chicken stock, heavy cream, salt, and coriander. Cook for 3 minutes.
  4. Once cool, blend this low-carb soup until smooth.
