Halloumi and Zoodles With Sauce Recipe

Ingredients: 

  • 3 tbsp parmesan cheese, grated 
  • 1½ tbsp pumpkin seeds 
  • 2 tbsp olive oil 
  • 1 medium zucchini 
  • 5 medium cherry tomatoes, halved 
  • 1½ handful fresh basil
  • 85g/3oz halloumi cheese 
  • 1 cup arugula leaves 
  • 1 pinch ground black pepper

Instructions: 

  1. Slice the halloumi cheese. Heat the olive oil in a grill pan. Add the cheese and fry for 2–3 minutes on each side.
  2. Place the pumpkin seeds, parmesan, basil, and 4 tablespoons of water in a food processor. Blitz until fine.
  3. Using a spiralizer or vegetable peeler, cut the zucchini into thin noodle-like strips. Then blanch in a colander with boiling water.
  4. Toss the zucchini noodles with the prepared sauce.
  5. Arrange arugula leaves on a plate and top with zoodles, cherry tomatoes, and halloumi cheese. Sprinkle it with black pepper, and enjoy!
