Halloumi Zoodles With Pesto Sauce Recipe

Ingredients: 

  • 1½ medium zucchini 
  • 1 cup halloumi cheese cubes 
  • ½ cup tomato, chopped 
  • 3 tbsp parmesan cheese, grated 
  • 1½ tbsp pumpkin seeds 
  • 1 tbsp olive oil 
  • 2 handfuls fresh basil

Instructions: 

  1. Heat the olive oil in a pan. Add halloumi cheese and stir fry for 3 minutes.
  2. In a food processor, combine pumpkin seeds, parmesan, basil, and 5 tablespoons of water. Process until finely chopped.
  3. Cut the zucchini into thin noodle-like strips, or use a vegetable spiralizer or peeler. Place the zucchini in a colander and blanch by pouring boiling water over them.
  4. Place the zucchini in a bowl, add the pesto, and mix well. Add the halloumi cheese and the tomatoes. Enjoy!
