Add a freshly made basil pesto sauce to your zoodles for a taste sensation. Serve with halloumi cheese for a protein-packed vegetarian keto meal.
Ingredients:
- 1½ medium zucchini
- 1 cup halloumi cheese cubes
- ½ cup tomato, chopped
- 3 tbsp parmesan cheese, grated
- 1½ tbsp pumpkin seeds
- 1 tbsp olive oil
- 2 handfuls fresh basil

Instructions:
- Heat the olive oil in a pan. Add halloumi cheese and stir fry for 3 minutes.
- In a food processor, combine pumpkin seeds, parmesan, basil, and 5 tablespoons of water. Process until finely chopped.
- Cut the zucchini into thin noodle-like strips, or use a vegetable spiralizer or peeler. Place the zucchini in a colander and blanch by pouring boiling water over them.
- Place the zucchini in a bowl, add the pesto, and mix well. Add the halloumi cheese and the tomatoes. Enjoy!
