A pesto-inspired sauce brings all the flavor to this keto vegetarian zoodle dish. Served with perfectly grilled halloumi cheese, it's a recipe your friends will be asking for.
Ingredients:
- 3 tbsp parmesan cheese, grated
- 1½ tbsp pumpkin seeds
- 2 tbsp olive oil
- 1 medium zucchini
- 5 medium cherry tomatoes, halved
- 1½ handful fresh basil
- 85g/3oz halloumi cheese
- 1 cup arugula leaves
- 1 pinch ground black pepper

Instructions:
- Slice the halloumi cheese. Heat the olive oil in a grill pan. Add the cheese and fry for 2–3 minutes on each side.
- Place the pumpkin seeds, parmesan, basil, and 4 tablespoons of water in a food processor. Blitz until fine.
- Using a spiralizer or vegetable peeler, cut the zucchini into thin noodle-like strips. Then blanch in a colander with boiling water.
- Toss the zucchini noodles with the prepared sauce.
- Arrange arugula leaves on a plate and top with zoodles, cherry tomatoes, and halloumi cheese. Sprinkle it with black pepper, and enjoy!
