Halloumi Salad With Poached Eggs Recipe

Ingredients: 

  • 1 medium egg
  • 1 pinch ground black pepper 
  • 1 tbsp olive oil 
  • 1 pinch salt 
  • 1/2 medium tomato, wedges 
  • 1 cup lettuce, chopped 
  • 1/2 medium cucumber, sliced 
  • 1/2 medium avocado, sliced 
  • 95g/3.4oz halloumi cheese 
  • 2 tbsp lemon juice

Instructions: 

  1. Heat half of the olive oil in a non-stick frying pan over medium heat. Place halloumi slices in the pan and fry for about 3 minutes on each side or until golden brown and crispy.
  2. Meanwhile, bring a pan of water filled at least 2 in/5cm deep to a simmer. Slowly crack the eggs into the simmering water. Cook for about 3–4 minutes. Lift the eggs out with a slotted spoon and drain them on a paper towel.
  3. To assemble the salad, top chopped lettuce with tomato wedges, sliced cucumber, avocado slices, fried halloumi, and poached eggs. Drizzle with the remaining olive oil and lemon juice. Season with salt and ground black pepper. Serve and enjoy!
