Ingredients: 

  • ½ medium cucumber, sliced 
  • 1 tbsp olive oil 
  • 1 pinch ground black pepper 
  • 1 pinch garlic powder
  • 1 pinch dried thyme
  • ⅓ cup cherry tomatoes, halved
  • 4 fresh basil leaves
  • 70g halloumi cheese 
  • 1 tsp lemon juice 
  • 1 pinch salt

Instructions: 

  1. Heat half the amount of olive oil in a non-stick frying pan. Add sliced halloumi cheese to the frying pan and fry for a few minutes until golden brown on both sides.
  2. In a bowl, combine cherry tomatoes with cucumber. Drizzle lemon juice and the remaining olive oil. Sprinkle garlic powder, dried thyme, salt, and ground black pepper. Toss well.
  3. Arrange the halloumi on a plate with the cucumber and cherry tomato salad on the side. Garnish with fresh basil leaves. Enjoy!
