Grilled Veggies With Chicken Recipe

The vegetable mix is delicious and inexpensive, making it a great choice when you’re on a budget but still want great taste and results.

Ingredients: 

  • ½ small bell pepper, cut into strips
  • 1½ tbsp sesame seeds
  • 2 tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 2 sprigs fresh parsley
  • ½ small zucchini, chopped
  • 6 medium cherry tomatoes, halved
  • 110g/3.9oz chicken breast, raw
  • 1 pinch smoked paprika

Instructions:

  1. Chop chicken into small pieces and season with a pinch of salt, ground black pepper, and smoked paprika.
  2. Heat half of the olive oil in a frying pan over medium heat. Add chicken and cook for about 6–7 minutes or until cooked through and no longer pink inside.
  3. Meanwhile, in a bowl, combine the remaining olive oil, a pinch of salt, and ground black pepper. Add bell pepper, zucchini, and cherry tomatoes. Mix together gently until the vegetables are well coated.
  4. Heat a grill or a grill pan over medium-high heat. Add vegetables and grill for about 2–3 minutes on each side.
  5. Serve chicken with grilled veggies. Garnish with sesame seeds and parsley. Enjoy!
