Grilled Shrimp Skewers With Veggies Recipe

Ingredients: 

  • 2½ tbsp olive oil
  • 1 handful spinach
  • 1 tsp sesame seeds
  • 95g/3.35oz shrimp, raw
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 tbsp lemon juice
  • 2 pinches oregano, dried
  • 1 small zucchini, sliced
  • 4 medium cherry tomatoes

Instructions: 

  1. Add olive oil, lemon juice, sesame seeds, salt, ground black pepper, and oregano to a mixing bowl and whisk together. Set aside half the amount of the prepared mixture for later use. Place shrimp and zucchini in the bowl with the prepared sauce. Mix together gently until shrimp and zucchini are well coated.
  2. Thread shrimp onto wooden skewers.
  3. Heat a grill or a grill pan to medium-high heat. Place the skewers, zucchini, and cherry tomatoes on the grill and grill everything for 2–3 min on each side until the shrimp are bright pink and cooked through and the vegetables are lightly charred.
  4. Assemble the shrimp skewers, cherry tomatoes, zucchini, and spinach on a plate. Drizzle with the remaining olive oil mixture. Enjoy!
