Grilled Salmon With Fresh Salad Recipe

Serve with a zesty low-carb salad of spinach and tomatoes for the perfect quick meal full of healthy fats.

Ingredients: 

  • 1½ cup spinach
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 tbsp lemon juice
  • 7 medium cherry tomatoes, halved
  • 145g/5oz salmon filet, raw
  • 3 cloves garlic, minced

Instructions: 

  1. In a bowl, combine half of the olive oil, garlic, salt, and ground black pepper. Add salmon filet and toss well.
  2. Heat a grill or a grill pan over medium-high heat. Place salmon and grill for about 3–4 minutes on each side.
  3. Meanwhile, in a bowl, mix together the remaining olive oil and lemon juice.
  4. On a serving plate, arrange spinach, cherry tomatoes, and the salmon filet. Drizzle with the olive oil mixture, and enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
