Grilled Pork With Veggies Recipe

With pork chops, broccoli, and cherry tomatoes, this is an instant classic for any keto meal plan.

Ingredients:

  • ⅓ small broccoli, cut into florets
  • 2 tbsp olive oil
  • 2 pinches salt 
  • 2 pinches ground black pepper
  • 2 tsp lemon juice
  • 1 pinch garlic powder
  • 1 pinch oregano, dried
  • 5 medium cherry tomatoes, halved
  • 90g/3.2oz pork chop, raw

Instructions: 

  1. In a bowl, combine half of the olive oil, a pinch of salt, ground black pepper, and garlic powder. Add pork chops and rub the seasoning well.
  2. Heat a grill or a grill pan over medium-high heat. Add pork chops and grill for about 3–5 minutes on each side until well browned and cooked through.
  3. Meanwhile, add broccoli to a steamer basket, and place it in a saucepan filled with water, making sure the water doesn’t reach the steamer basket (or use a pot with a metal strainer or colander). Bring the water to a boil, reduce the heat to a simmer, and cover the pan. Let the broccoli steam for 5 minutes or until crisp-tender.
  4. In a mixing bowl, add steamed broccoli, cherry tomatoes, the remaining olive oil, lemon juice, a pinch of salt, ground black pepper, and oregano. Mix well.
  5. Serve grilled pork chops with veggies on a plate, and enjoy!

*NOTE: Feel free to use frozen broccoli.
