Ingredients: 

  • 1 small tomato, chopped 
  • ½ small cucumber, sliced 
  • 1 cup spring mix salad 
  • 3.5oz/100g pork chop, raw 
  • 2 tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper 
  • ½ tbsp lemon juice

Instructions: 

  1. Marinate the pork chop with half of the olive oil, a pinch of salt, and a pinch of ground black pepper. 
  2. Preheat a grill or a grill pan to medium-high heat. Place the pork chop on the grill and cook for 7–8 minutes. Flip over and cook for an additional 7–8 minutes or until cooked through. 
  3. Meanwhile, assemble spring mix salad, cucumber, and tomato in a mixing bowl. Drizzle with the remaining olive oil and lemon juice. Season with salt and ground black pepper. Mix everything well.
  4. Serve grilled pork chop with vegetable salad on a serving plate. Enjoy!
