Ingredients:
- 1 small tomato, chopped
- ½ small cucumber, sliced
- 1 cup spring mix salad
- 3.5oz/100g pork chop, raw
- 2 tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- ½ tbsp lemon juice

Instructions:
- Marinate the pork chop with half of the olive oil, a pinch of salt, and a pinch of ground black pepper.
- Preheat a grill or a grill pan to medium-high heat. Place the pork chop on the grill and cook for 7–8 minutes. Flip over and cook for an additional 7–8 minutes or until cooked through.
- Meanwhile, assemble spring mix salad, cucumber, and tomato in a mixing bowl. Drizzle with the remaining olive oil and lemon juice. Season with salt and ground black pepper. Mix everything well.
- Serve grilled pork chop with vegetable salad on a serving plate. Enjoy!
