Grilled Chicken Breast Salad Recipe

Ingredients: 

  • 3oz/85g chicken breast, raw 
  • ½ small cucumber, chopped 
  • 1 handful arugula leaves
  • ½ cup lettuce, chopped 
  • 1 small avocado, sliced 
  • 6 medium cherry tomatoes, halved 
  • 1 ½ tbsp olive oil 
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ½ tbsp lemon juice
  • 1 pinch smoked paprika

Instructions: 

  1. In a bowl, combine half of the olive oil, smoked paprika, salt, and ground black pepper. Add chicken breast and toss well. 
  2. Heat a grill or a grill pan over medium-high heat. Add chicken and grill for about 3–5 minutes on each side or until cooked through and not pink inside. Remove the chicken breast from the pan and slice it. 
  3. In a bowl, combine lettuce, arugula, cucumber, cherry tomatoes, avocado, and chicken slices. Drizzle with lemon juice and the remaining olive oil. Adjust the seasoning to taste, or use other favorite spices instead. Enjoy!
