Fried Tofu, Spinach, Bell Pepper Salad Recipe

The freshness of the salad with the crunchiness of the tofu combines to create a salad better than at any restaurant!

Ingredients: 

  • 125g/4.4oz tofu
  • 1 tbsp sesame seeds
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ½ small cucumber, sliced
  • ½ medium avocado, chopped
  • ½ cup spinach
  • ½ medium bell pepper, chopped
  • 4 medium cherry tomatoes, quarters
  • 4 leaves basil, fresh
  • 1 pinch paprika, smoked

Instructions: 

  1. Cut tofu into cubes. Season tofu cubes with salt, ground black pepper, and smoked paprika.
  2. Heat half of the olive oil in a nonstick frying pan over medium heat. Add the tofu to the pan and fry for 3–4 minutes on each side until crispy.
  3. Assemble spinach, cherry tomatoes, bell pepper, cucumber, avocado, and fried tofu in a bowl. Drizzle with the remaining olive oil and lemon juice, sprinkle sesame seeds on top, and garnish with basil leaves. Enjoy!
