Fried Eggs with Chili Kale Recipe

Served as a base for perfectly fried eggs, it is a spicy, low-carb breakfast that includes healthy greens, protein and fat.

Ingredients: 

  • 3 medium eggs
  • 1 cup kale, chopped 
  • 1 tsp red chili pepper, chopped
  • 2 tbsp olive oil
  • 2 pinches salt and pepper
  • 1 clove garlic, minced

Instructions:

  1. Season kale with a pinch of salt and ground black pepper. 
  2. Heat a frying pan with olive oil over medium-high heat.
  3. In the frying pan, add kale, red chili pepper, and garlic. Cook for 5–8 minutes tossing occasionally until kale is slightly wilted but still crisp. 
  4. In the same frying pan, crack the eggs and season with a pinch of salt and ground black pepper. Cover the pan with a lid and cook for another 2–4 minutes until the egg whites are set. 
  5. On a serving plate, serve eggs with kale, and enjoy! 

NOTE: Feel free to use frozen kale.
