Ingredients: 

  • 1½ tbsp olive oil
  • 3 medium eggs
  • 1 cup cherry tomatoes, sliced 
  • 1½ cup spinach
  • 1 pinch ground black pepper 
  • 1 pinch salt

Instructions: 

  1. Heat olive oil in a pan over medium heat. Crack eggs into the skillet. Reduce the heat to medium-low. 
  2. Cook until the egg whites are completely set, and the yolks begin to thicken but are not hard. Then add spinach and cook for another 30 seconds. Season with salt and ground black pepper. 
  3. Serve fried eggs with spinach and tomatoes on a plate. Enjoy!
