Classic fried eggs served with asparagus and avocado make the perfect low-carb breakfast that is high in protein and fat.
Seasoned with salt, pepper, and a drizzle of zesty lemon juice will have you asking for more.
Ingredients:
- 2 medium eggs
- 1 small avocado
- 2 tsp olive oil
- 2 handfuls arugula leaves
- 2 pinches salt
- 2 pinches ground black pepper
- 1 pinch basil, dried
- ½ cup asparagus, chopped
- 1 tsp sesame seeds
- 2 tsp lemon juice
- ½ medium cucumber, sliced

Instructions:
- Heat half of the olive oil in a frying pan over medium-high heat. Crack the eggs and fry until desired doneness. Season with a pinch of salt and ground black pepper.
- In the meantime, heat the remaining olive oil in a separate frying pan. Add chopped asparagus and stir fry for about 3–4 min.
- Serve fried eggs on a plate with asparagus, sliced avocado, arugula, and sliced cucumber on the side. Sprinkle sesame seeds, a pinch of salt, ground black pepper, and dried basil, drizzle lemon juice over the vegetables. Enjoy!
