Grilled tender garlic chicken served with a fresh cherry tomato and spinach salad for a light, balanced, low-carb, gluten-free meal.
Ingredients:
- 1½ cup spinach
- 2½ tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 1 tbsp lemon juice
- 4.6oz/130g chicken breast, raw
- 2 cloves garlic, minced
- 8 medium cherry tomatoes, halved

Ingredients:
- Rub the chicken with minced garlic and season with a pinch of salt and ground black pepper.
- Heat half of the olive oil in a frying pan or a grill pan over medium heat. Add the chicken breast and cook for 4–5 minutes on each side or until golden brown and no longer pink inside.
- Serve the fried chicken on a plate with spinach and cherry tomatoes. Drizzle the rest of the olive oil and lemon juice over the salad. Enjoy!
