Fried Eggs With Tomato and Cucumber Recipe

Ingredients:

  • 1 small cucumber, sliced
  • 1 tbsp olive oil
  • 3 medium eggs
  • 4 medium cherry tomatoes, quartered
  • 1½ tbsp fresh parsley, chopped
  • 1 pinch salt
  • 1 pinch ground black pepper

Instructions: 

  1. Heat olive oil in a non-stick skillet over medium-high heat. Crack the eggs straight into the skillet. Fry for a few minutes or until the egg whites are set.
  2. Serve the eggs on a plate with cucumber and cherry tomatoes. Season with salt, ground black pepper, and sprinkle with fresh parsley. Enjoy!
