Ingredients:
- 1 small cucumber, sliced
- 1 tbsp olive oil
- 3 medium eggs
- 4 medium cherry tomatoes, quartered
- 1½ tbsp fresh parsley, chopped
- 1 pinch salt
- 1 pinch ground black pepper

Instructions:
- Heat olive oil in a non-stick skillet over medium-high heat. Crack the eggs straight into the skillet. Fry for a few minutes or until the egg whites are set.
- Serve the eggs on a plate with cucumber and cherry tomatoes. Season with salt, ground black pepper, and sprinkle with fresh parsley. Enjoy!
