Eggs, Shrimp, and Avocado Salad Recipe

So, when you bring them all together, you can’t go wrong. This dish is full of flavor and healthy fat to keep you in ketosis.

Ingredients: 

  • 2 medium eggs
  • 1½ tbsp olive oil
  • 80g/2.8oz shrimp, raw
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 tbsp lemon juice
  • ½ medium avocado, sliced
  • 1½ cup lettuce, chopped

Instructions: 

  1. In a pot with boiling water, boil the eggs for about 8–10 minutes for hard yolk eggs. Cool eggs under cold running water, peel, and chop.
  2. Heat half of the olive oil in a frying pan over medium heat. Once hot, add shrimp in a single layer. Cook without moving for about 2 minutes or until they turn pinkish on the bottom and just start to curl. Flip the shrimp and cook for 1–2 minutes more. Season it with a pinch of salt and ground black pepper.
  3. Arrange the lettuce, boiled eggs, fried shrimp, and avocado onto a plate. Drizzle with the remaining olive oil and lemon juice. Season the salad with a pinch of salt and ground black pepper. Toss to combine, and enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
