Keto Double-Cheese Grilled Sandwich Recipe

Ingredients:

  • 2 slices keto bread
  • 1 tablespoon butter
  • 1 slice American cheese
  • 1 slice pepper jack cheese 
  • ½ tsp Dijon mustard

Instructions:

  1. Spread butter over 1 side of each slice of bread. 
  2. Spread a thin layer of Dijon mustard on the unbuttered side of one slice of bread, top with both slices of cheese, and place the second slice of bread, buttered side up, on top to make a sandwich.
  3. Lightly spray a non-stick pan with cooking spray and heat over medium heat.
  4. Once hot, add the sandwich to the pan and cook for 2–3 minutes. Flip and cook for a further 2 minutes or until the cheese oozes out the sides when you press down on the sandwich with a spatula. 
  5. Remove the grilled cheese sandwich from the pan, slice it in half, and enjoy.
