Dirty Keto Sweet and Sour Pork Recipe

Ingredients:

  • ⅓ cup almond flour
  • 1 tsp baking powder 
  • 1 large egg, lightly beaten
  • 2 tbsp cold club soda
  • 1lb/450g pork loin steak, cubed 
  • ¼ tsp salt
  • ¼ cup green bell peppers, diced
  • ¼ cup red bell peppers, diced
  • Oil for frying (olive, canola, coconut, or sesame)
  • 2 scallions, thinly sliced 
  • ½ tbsp sesame seeds

Sweet and Sour Sauce:

  • ⅓ cup sherry vinegar
  • ½ tsp stevia liquid
  • ¼ cup tomato puree
  • 1 tsp peanut oil
  • 2 tbsp butter
  • 1 tsp garlic powder
  • ¼ cup water
  • 1 tsp psyllium husk

Instructions:

  1. Mix together the almond flour, baking powder, egg, and club soda to make a batter.
  2. Heat the oil in a medium-sized frying pan over medium-high heat. It is ready for frying when a drop of batter sizzles when you drop it into the oil.
  3. Season the pork with salt and pepper to taste. Cover the pieces in batter and fry in batches for 8–10 minutes or until crispy and golden brown. Drain on a paper towel.
  4. To make the sauce: Add the sherry vinegar, stevia liquid, tomato puree, peanut oil, butter, garlic powder, and water to a small saucepan, mix well, and bring to a boil. Once boiling, remove from the heat, add the psyllium husk, stir it into the sauce, and set aside.
  5. Heat oil in a large saucepan and fry the green and red bell peppers until cooked. Add the crispy pork and the sauce and toss to combine.
  6. Serve over cauliflower rice topped with sesame seeds and scallions.
