For the salad:

  • 1 English cucumber, diced
  • 4 Roma tomatoes, diced; or 10 cherry tomatoes, halved
  • 2 avocados, diced
  • 1/4 red onion, thinly sliced
  • Fresh cilantro, chopped

For the dressing:

  • 1/2 lemon
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste


  1. Mix olive oil, salt, black pepper, and garlic powder in a small bowl. Squeeze in half a fresh lemon.
  2. Soak the red onion slices in water for about 5 minutes. This helps remove the sharpness.
  3. Add your salad ingredients to a large bowl.
  4. Pour your dressing evenly over the salad.
