Ingredients:
For the salad:
- 1 English cucumber, diced
- 4 Roma tomatoes, diced; or 10 cherry tomatoes, halved
- 2 avocados, diced
- 1/4 red onion, thinly sliced
- Fresh cilantro, chopped
For the dressing:
- 1/2 lemon
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
Instructions:
- Mix olive oil, salt, black pepper, and garlic powder in a small bowl. Squeeze in half a fresh lemon.
- Soak the red onion slices in water for about 5 minutes. This helps remove the sharpness.
- Add your salad ingredients to a large bowl.
