This cucumber, bell pepper, and parmesan salad is so easy to make you’ll have it as you go-to whenever you need something quick and healthy!

Ingredients: 

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ¼ small red onion, chopped
  • 1 small cucumber, chopped
  • ½ medium bell pepper, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 cup lettuce, chopped
  • ½ cup parmesan cheese, grated

Instructions: 

  1. Add red onion, cucumber, bell pepper, and lettuce to a serving plate.
  2. Drizzle with olive oil and lemon juice, season with salt and ground black pepper, and add grated parmesan cheese on top. Garnish with chopped parsley, and enjoy!
