Creamy Tomato Soup with Bacon Recipe

Bacon and parmesan toppings make it so satisfying! Double the recipe to feed a larger group of friends, let’s introduce them to a delicious keto!

Ingredients: 

  • 1 pinch ground black pepper
  • 1 pinch salt
  • ¼ small onion, sliced
  • 1 cup vegetable broth
  • 2 ½ tbsp sour cream, 19% fat
  • 1 tbsp olive oil
  • 1 clove garlic, chopped
  • 45g bacon, raw
  • ½ cup canned tomatoes, chopped 
  • 1 pinch chili flakes
  • 1 medium tomato, chopped 
  • 1 pinch dried basil 
  • 2 tbsp parmesan cheese, grated 

Instructions: 

  1. Heat a frying pan with olive oil over medium-high heat and add bacon. Fry for 2–3min until crispy. Roughly chop the bacon, and set aside. 
  2. Bring a pot to a boil with vegetable broth over medium heat. 
  3. In the pot, add onion, tomato, chopped canned tomatoes, garlic, salt, dried basil, and ground black pepper. Simmer for 10–15min stirring occasionally. Adjust the soup consistency by pouring more hot broth or boiling water. 
  4. Using a blender, blend the soup until smooth texture. Then, add sour cream and give it another whirl. 
  5. In a serving bowl, serve soup and top it with bacon, parmesan cheese, and chili flakes (optional). Enjoy!
