Ingredients for 4 servings:

  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup roasted broccoli, chopped
  • ½ cup chicken broth
  • 2 tbsp unsalted butter
  • ½ tbsp olive oil
  • ½ red onion, chopped
  • 1 tsp garlic, minced
  • ½ cup heavy cream
  • ½ cup cream cheese
  • 2oz/60g mushrooms, sliced
  • ½ tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste

How to prepare:

  1. In a resealable bag, add the chicken, Italian seasoning, salt, pepper, olive oil, and garlic.
  2. Seal the bag and shake until fully coated. Let it marinate in the fridge for at least one hour.
  3. Place a skillet over medium heat and melt butter.
  4. Add the marinated chicken and cook each side for 5 minutes. Set aside.
  5. Add sliced onions, mushrooms, and chicken stock.
  6. Add the spinach once reduced.
  7. Add cream cheese and heavy cream. Stir well until combined. Add the chicken to the low-carb creamy sauce, and enjoy!
