Creamy Cauliflower Risotto Recipe

Creamy, cheesy, and delicious; it’s sure to become a favorite.

Ingredients: 

  • 1 small cauliflower, cut into florets 
  • ⅔ cup parmesan cheese, grated
  • 1 tbsp butter
  • 1 tsp lemon juice 
  • ⅓ cup heavy cream, 36% fat 
  • 1 pinch onion powder 
  • 1 pinch salt 
  • 1 pinch ground black pepper

Instructions: 

  1. Chop the cauliflower florets finely with a sharp knife.
  2. Heat a skillet over medium-high heat. Add heavy cream, butter, onion powder, and lemon juice, and cook for about 3–5 minutes.
  3. Add the chopped cauliflower and continue to simmer, stirring frequently, for 8–10 minutes. Season with salt and ground black pepper.
  4. Add the grated parmesan cheese and stir until melted.
  5. Serve in a bowl. Enjoy!

*NOTE: Feel free to use frozen vegetables.
