Creamy Cauliflower Mash Recipe

Cream cheese and parmesan make this recipe tasty and high in fat to help you stay in ketosis.

Ingredients: 

  • 2 cloves garlic, minced 
  • 1 small cauliflower 
  • 2 tbsp butter 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 1½ tbsp cream cheese, 34% fat 
  • 1 tbsp fresh chives, chopped
  • ⅓ cup parmesan cheese, grated

Instructions: 

  1. Cut the cauliflower into small florets. Place in a pot of salted boiling water and cook over medium heat for 15 minutes or until cauliflower is very soft and mushy. Drain and set aside.
  2. Heat 1 tablespoon of butter in a frying pan over medium heat. Add the minced garlic and cook for 1–2 minutes, until fragrant.
  3. Place the cooked cauliflower, sauteed garlic, remaining butter, cream cheese, grated parmesan cheese, salt, and ground black pepper in a food processor. Process for 1–2 minutes until smooth.
  4. Transfer cauliflower mash to a bowl and garnish with chopped chives. Enjoy!

*NOTE: Feel free to use frozen vegetables.
