Cod Fillet With Tomato Recipe

 Served with tomato wedges and drizzled with a zesty lemon dressing, this cod filet is flavorful, simple to prepare, and keto-friendly. 

Ingredients: 

  • 1 clove garlic, minced 
  • 2½ tbsp olive oil  
  • 6oz/170g cod filet, raw  
  • 1 pinch salt  
  • 1 pinch ground black pepper  
  • 1 tbsp fresh parsley, chopped  
  • 2 tsp lemon juice 
  • 2 small tomatoes, wedges

Instructions: 

  1. Heat half of the olive oil in a pan over medium heat. Add cod filet and fry for 4–5 minutes on each side until nicely browned. 
  2. Meanwhile, in a small bowl, mix the remaining olive oil, lemon juice, garlic, parsley, salt, and ground black pepper. 
  3. Serve the cod filet on a plate with tomato. Drizzle the dressing over the cod filet. Enjoy!
