Cod Filet With Vegetable Salad Recipe

It’s a low-carb, high-fat meal that can be enjoyed any day of the week.

Ingredients:

  • ¼ small red onion, sliced
  • 1 small cucumber, chopped
  • ½ small bell pepper, sliced
  • 2½ tbsp olive oil
  • 5.5oz/155g cod filet, raw
  • 5 medium cherry tomatoes, halved
  • 2 pinches salt
  • 2 pinches ground black pepper
  • ½ tbsp lemon juice
  • 4 leaves fresh basil

Instructions:

  1. Season cod filet with a pinch of salt and a pinch of ground black pepper. 
  2. Heat half of the olive oil in a frying pan over medium heat. Add cod filet and fry for 4–5 minutes on each side until nicely browned.
  3. Meanwhile, in a small bowl, mix the remaining olive oil, lemon juice, salt, and ground black pepper.
  4. Add cucumber, bell pepper, red onion, and cherry tomatoes into a bowl. Drizzle with the olive oil mixture and gently toss to combine. 
  5. Serve cod filet with prepared vegetable salad on a plate. Garnish with basil leaves. Enjoy!
