It’s a low-carb, high-fat meal that can be enjoyed any day of the week.
Ingredients:
- ¼ small red onion, sliced
- 1 small cucumber, chopped
- ½ small bell pepper, sliced
- 2½ tbsp olive oil
- 5.5oz/155g cod filet, raw
- 5 medium cherry tomatoes, halved
- 2 pinches salt
- 2 pinches ground black pepper
- ½ tbsp lemon juice
- 4 leaves fresh basil

Instructions:
- Season cod filet with a pinch of salt and a pinch of ground black pepper.
- Heat half of the olive oil in a frying pan over medium heat. Add cod filet and fry for 4–5 minutes on each side until nicely browned.
- Meanwhile, in a small bowl, mix the remaining olive oil, lemon juice, salt, and ground black pepper.
- Add cucumber, bell pepper, red onion, and cherry tomatoes into a bowl. Drizzle with the olive oil mixture and gently toss to combine.
- Serve cod filet with prepared vegetable salad on a plate. Garnish with basil leaves. Enjoy!
