Coconut Overnight Oats Recipe

We all know about superfood - chia.
We all know about superfood - chia.

Its our keto-friendly take on chia, with almond meal, coconut flakes and few other breakfast perfect ingredients. In the morning what is left –  only add some toppings.

Ingredients:

  • 3 tbsp almond meal
  • 1 tsp ground flaxseed
  • 1/2 cup canned coconut milk 
  • 1 tablespoon chia seeds
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon shredded unsweetened coconut flakes
  • 1 tablespoon keto-friendly sweetener

Instructions:

  1. In a bowl, combine the almond meal, canned coconut milk, chia seeds, vanilla extract, flaxseed, and ground cinnamon. 
  2. Mix well and refrigerate for at least 2 hours, or overnight.
  3. In the morning, stir in the shredded unsweetened coconut flakes, keto-friendly sweetener and few slices of banana for decoration.
  4. Enjoy your vegan keto breakfast as is, or serve it with additional toppings such as fresh fruit or butter (peanut).
