Ingredients:

  • 1 cup low-carb almond flour 
  • 1/4 cup coconut flour 
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons powdered stevia
  • 3 tablespoons cold almond butter, diced
  • 1/4 cup unsweetened almond milk 
  • Optional add-ins: dried fruit, vegan chocolate chips, nuts

Instructions:

  1. Preheat the oven to 350°F/180°C and line a baking sheet with parchment paper.
  2. Mix both the flours, salt, baking powder, and stevia.
  3. To make a crumbly texture, continue cutting in the cold almond butter.
  4. Mix in the low-carb milk and any desired add-ins.
  5. Dust some flour on a flat surface. Transfer the dough onto it and shape it into a 1-inch thick round.
  6. Cut the dough into 8 triangles and place them on the prepared baking sheet.
  7. Bake for 20 minutes. The scones should turn lightly golden brown.
  8. Enjoy them warm with vegan butter or jam.
