Here’s we share ours: a perfect combo for a quick meal when you want something light, but still be full until your next snack or meal. Lemon juice balances out the heavy cream and cream cheese.

Ingredients: 

  • 2 tsp olive oil 
  • 2 pinches ground black pepper 
  • 2 pinches salt
  • ½ tbsp lemon juice
  • 1 cup chicken broth  
  • 4oz/115g chicken breast, raw
  • 1½ tbsp fresh parsley, chopped 
  • 3 tbsp heavy cream, 36% fat 
  • 1½ tbsp cream cheese, 34% fat 

Instructions: 

  1. Season the chicken with a pinch of salt and ground black pepper. Chop it into bite-sized pieces.
  2. Heat the olive oil in a frying pan over medium heat. Add chopped chicken and fry for 5–6min or until golden brown and no longer pink inside. 
  3. Add chicken broth and chopped chicken into a pot and heat until warm. 
  4. Add heavy cream, lemon juice, and cream cheese to the pot and cook for 4min more or until the cream cheese is melted. Season the soup with a pinch of salt and ground black pepper. 
  5. Adjust the soup consistency by pouring more broth or boiling water. 
  6. Serve in a bowl and garnish with fresh parsley. Enjoy!
