Here’s we share ours: a perfect combo for a quick meal when you want something light, but still be full until your next snack or meal. Lemon juice balances out the heavy cream and cream cheese.
Ingredients:
- 2 tsp olive oil
- 2 pinches ground black pepper
- 2 pinches salt
- ½ tbsp lemon juice
- 1 cup chicken broth
- 4oz/115g chicken breast, raw
- 1½ tbsp fresh parsley, chopped
- 3 tbsp heavy cream, 36% fat
- 1½ tbsp cream cheese, 34% fat
Instructions:
- Season the chicken with a pinch of salt and ground black pepper. Chop it into bite-sized pieces.
- Heat the olive oil in a frying pan over medium heat. Add chopped chicken and fry for 5–6min or until golden brown and no longer pink inside.
- Add chicken broth and chopped chicken into a pot and heat until warm.
- Add heavy cream, lemon juice, and cream cheese to the pot and cook for 4min more or until the cream cheese is melted. Season the soup with a pinch of salt and ground black pepper.
- Adjust the soup consistency by pouring more broth or boiling water.
- Serve in a bowl and garnish with fresh parsley. Enjoy!
