Keto Chicken Schnitzel With Tomato Sauce and Cheese Recipe

Coated in bread, the traditional recipe is far from being keto-friendly. This version uses almond flour and pork rinds to make a delicious low-carb crust.

Ingredients:

  • 2lbs/900g boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 3 large eggs
  • ½ cup almond flour
  • 1 cup grated parmesan cheese
  • 1½ cups pork rinds, ground
  • 2 tbsp avocado oil for frying

Tomato sauce:

  • 3 tbsp olive oil 
  • 1 small onion, chopped 
  • 3 cloves garlic, minced 
  • 2 cans tomatoes, peeled and chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 6 fresh basil leaves 
  • Salt and pepper, to taste

Toppings:

  • 8oz/226g mozzarella cheese, sliced
  • 1 cup shredded parmesan cheese

Instructions:

  1. Preheat oven to 400℉ (200℃ ). 
  2. Place the chicken thighs between 2 sheets of parchment paper and pound it with a mallet or rolling pin until it is ¼ inch thick.
  3. Beat the eggs in a shallow dish. Place the almond flour in a second shallow dish, and mix the grated parmesan and ground pork rinds in a third shallow dish.
  4. Dust with almond flour. 
  5. Season the chicken thighs with salt and pepper and dip each piece in the almond flour. Make sure the chicken is evenly coated in a light layer of flour.
  6. Dip the floured chicken into the beaten egg, and then cover it in the pork rind and parmesan cheese to form an even coating.
  7. Heat the oil in a large skillet over medium-high heat. Test the temperature by dropping a small piece of the coating mixture into the oil. If it sizzles, your oil is ready for cooking. 
  8. Cook the chicken pieces in batches until golden brown on both sides and place on a plate lined with a paper towel. 
  9. Make the tomato sauce in the same skillet: Heat the olive oil and fry the onion and garlic until the onion is soft. Add the tomatoes, herbs, salt, and pepper, and simmer over medium heat for 10 minutes.
  10. Assemble the dish – spread a thin layer of tomato sauce over the bottom of a large casserole dish. Spread ⅓ of the grated parmesan cheese over the sauce and then place half of the cooked chicken pieces on top. Place half of the mozzarella slices on top of the chicken. Repeat until you have 3 layers, ending with a layer of sauce and parmesan cheese.
  11. Bake for 20 minutes or until the cheese is melted and golden.
