Chicken Salad With Walnut Dressing Recipe

Walnuts also offer some of the best fats around, giving you a boost of heart-healthy fats, as well as an earthy and peppery flavor.

Ingredients:

  • 2 tbsp olive oil
  • 2 pinches ground black pepper
  • 85g/3oz chicken breast, raw
  • 2 pinches salt
  • 1 tbsp lemon juice
  • 1 cup cherry tomato quarters
  • 4 walnuts, chopped
  • 1½ cup arugula leaves

Instructions:

  1. Slice the chicken breast and season with a pinch of salt and ground black pepper.
  2. Heat half the olive oil in a non-stick frying pan over medium heat. Add the sliced chicken and cook for 3–5 minutes or until golden brown and no longer pink inside.
  3. Meanwhile, in a bowl, whisk together the lemon juice, walnuts, a pinch of salt, ground black pepper, and remaining olive oil. Set aside.
  4. Place the cherry tomatoes, arugula leaves, and sliced chicken in a bowl. Drizzle with walnut vinaigrette. Enjoy!
