Chicken Salad With Walnut Dressing Recipe

This chicken salad is incredibly easy to make but tastes fantastic every time.

This chicken salad is incredibly easy to make but tastes fantastic every time.
Walnuts also offer some of the best fats around, giving you a boost of heart-healthy fats, as well as an earthy and peppery flavor.
Ingredients:
- 2 tbsp olive oil
- 2 pinches ground black pepper
- 85g/3oz chicken breast, raw
- 2 pinches salt
- 1 tbsp lemon juice
- 1 cup cherry tomato quarters
- 4 walnuts, chopped
- 1½ cup arugula leaves

Instructions:
- Slice the chicken breast and season with a pinch of salt and ground black pepper.
- Heat half the olive oil in a non-stick frying pan over medium heat. Add the sliced chicken and cook for 3–5 minutes or until golden brown and no longer pink inside.
- Meanwhile, in a bowl, whisk together the lemon juice, walnuts, a pinch of salt, ground black pepper, and remaining olive oil. Set aside.
- Place the cherry tomatoes, arugula leaves, and sliced chicken in a bowl. Drizzle with walnut vinaigrette. Enjoy!
