Chicken Lettuce Wraps Recipe

Ingredients:

  • 1 tsp olive oil
  • ¼ cup chopped onion
  • ½ tsp minced garlic
  • 4oz/115g ground chicken
  • ¼ cup mixed chopped peppers
  • ¼ cup chopped mushrooms
  • Salt and pepper
  • 1 tbsp soy sauce or tamari
  • ¼ tsp hot or chili sauce (optional)
  • ½ tsp sesame oil
  • ½ tsp rice wine vinegar
  • Stevia or other sugar-free sweeteners to taste
  • 1–2 lettuce leaf

Instructions: 

  1. Heat oil in a heavy pan. 
  2. Add onion and garlic and stir-fry for a minute.
  3. Put in the chicken and stir through. 
  4. Cook for 4–5 minutes.
  5. Add peppers and mushrooms and stir through. 
  6. Mix in salt and pepper.
  7. Cook for 2–3 minutes till the vegetables are almost done.
  8. Mix together the soy sauce, chili sauce, sesame oil, vinegar, and sweetener (if using).
  9. Spoon this onto the chicken and vegetables and stir till the flavors are blended. 
  10. Place the lettuce leaf on a plate and spoon the chicken mixture on top.
