A healthy mix of proteins and vegetables in an Asian-inspired dish ensures you don’t miss your favorite foods.
Ingredients:
- 1 tsp olive oil
- ¼ cup chopped onion
- ½ tsp minced garlic
- 4oz/115g ground chicken
- ¼ cup mixed chopped peppers
- ¼ cup chopped mushrooms
- Salt and pepper
- 1 tbsp soy sauce or tamari
- ¼ tsp hot or chili sauce (optional)
- ½ tsp sesame oil
- ½ tsp rice wine vinegar
- Stevia or other sugar-free sweeteners to taste
- 1–2 lettuce leaf

Instructions:
- Heat oil in a heavy pan.
- Add onion and garlic and stir-fry for a minute.
- Put in the chicken and stir through.
- Cook for 4–5 minutes.
- Add peppers and mushrooms and stir through.
- Mix in salt and pepper.
- Cook for 2–3 minutes till the vegetables are almost done.
- Mix together the soy sauce, chili sauce, sesame oil, vinegar, and sweetener (if using).
- Spoon this onto the chicken and vegetables and stir till the flavors are blended.
- Place the lettuce leaf on a plate and spoon the chicken mixture on top.
