This casserole recipe has everything: the goodness of keto, the satisfying cheese pull, and the flavorful mix of chicken and broccoli. 

Ingredients:

  • 4oz/115g broccoli florets, chopped
  • ½ cup rotisserie chicken, chopped
  • 1 tsp butter
  • 1 garlic clove, minced
  • ¼ cup heavy cream
  • ½ tsp cream cheese
  • ½ tsp Dijon mustard
  • 2 tbsp cheddar cheese, shredded
  • 2 tbsp mozzarella cheese, shredded
  • Fresh basil, chopped
  • Salt, to taste
  • Black pepper, to taste

How to prepare:

  1. Preheat the oven to 350°F/180°C.
  2. Steam broccoli for 3 minutes.
  3. In a saucepan, melt the butter over medium heat and add the garlic. Stir until fragrant.
  4. Add heavy cream, cream cheese, mustard, salt, pepper, and chopped chicken.
  5. Add most of the cheese and stir until melted.
  6. Mix in steamed broccoli. Add to a greased baking dish and sprinkle the rest of the cheese over it.
  7. Bake for 7–10 minutes until it’s well cooked and the cheese has browned. You can easily multiply the ingredients to make more servings!
