Chicken Breast With Cream Cheese Dip Recipe

Ingredients:

  • ¼ cup feta cheese, cubed
  • 1½ tbsp olive oil
  • 1 cup arugula leaves
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 tbsp lemon juice
  • 3.2oz/90g chicken breast, raw
  • 1 tbsp cream cheese, 34% fat 
  • 1 tsp fresh dill, chopped
  • 6 medium cherry tomatoes

Instructions:

  1. Season chicken with a pinch of salt and ground black pepper. 
  2. Heat half of the olive oil in a non-stick frying pan over medium heat. Add the chicken to the pan and cook for 7–8 minutes on each side or until golden brown and no longer pink inside. Add cherry tomatoes to the same pan and fry for a few minutes (if desired).
  3. Meanwhile, in a small bowl, mix together cream cheese, lemon juice, dill, a pinch of salt, and ground black pepper. Set aside.
  4. Assemble chicken, arugula leaves, feta cheese, and cherry tomatoes on a plate and drizzle with the remaining olive oil. Serve with the cream cheese dip on the side. Enjoy!
