Cherry Tomato and Pesto Salad Recipe

Make it as a light lunch, dinner, or simply serve it next to some nice piece of fish for a family gathering.

Ingredients: 

  • 2 ¼ cup cherry tomato, halved 
  • ⅓ cup parmesan cheese, grated 
  • 1 ½ tbsp olive oil 
  • 1 ½ tbsp pesto sauce 
  • 3 pinches salt 
  • 3 pinches ground black pepper 
  • 1 handful fresh basil
  • 1 slice low-carb bread 
  • 1 tbsp flaxseed 

Instructions: 

  1. Toast the bread if desired.  
  2. In a bowl, mix cherry tomatoes, flaxseed, olive oil, parmesan cheese, pesto sauce, and torn basil leaves. Season everything with salt and ground black pepper. Serve with bread, and enjoy!
