Could we call it an Italian dream? Try yourself with this incredibly easy to make Cherry Tomato and Pesto Salad.
Make it as a light lunch, dinner, or simply serve it next to some nice piece of fish for a family gathering.
Ingredients:
- 2 ¼ cup cherry tomato, halved
- ⅓ cup parmesan cheese, grated
- 1 ½ tbsp olive oil
- 1 ½ tbsp pesto sauce
- 3 pinches salt
- 3 pinches ground black pepper
- 1 handful fresh basil
- 1 slice low-carb bread
- 1 tbsp flaxseed
Instructions:
- Toast the bread if desired.
- In a bowl, mix cherry tomatoes, flaxseed, olive oil, parmesan cheese, pesto sauce, and torn basil leaves. Season everything with salt and ground black pepper. Serve with bread, and enjoy!
